Sushi is one of the most famous washoku in Japan. Edo-style sushi(江戸前寿司), which has sumeshi* with sliced raw fish of the season on the top, appeared late in the Edo period and became popular among people. As a center of washoku culture, sushi has been enjoyed all over the world..

*sumeshi (酢飯) is rice mixed with rice vinegar, sugar and salt, and occasionally kelt stock and sake.
